1 box lemon cake mix, Duncan Hines
4 eggs
1 c. apricot nectar juice
1/2 c. sugar
3/4 c. oil
In a bowl, beat together all the cake ingredients with an electric mixer for 4 minutes at medium speed. Pour in a greased and floured tube pan for 1 hour at 325 degrees. Set cake aside for 5 minutes.
GLAZE:
1/4 c. apricot nectar juice
1 1/2 c. confectioners’ sugar
Blend the apricot nectar with confectioners’ sugar to pour over warm cake.
